KANSAS CITY, Mo. – When perusing railroad Web sites, it’s common to find statistics, company press releases, maps, and other information that can sometimes make for dry reading. Railroads seldom reveal any information about their private business car trains. But at the Web site of Kansas City Southern Industries, you’ll not only find details about the KCS business car train, but a recipe from the trains’ dining car!
KCS has named its business train the Southern Belle in honor of the Kansas City to New Orleans streamliner that ran on KCS from 1940 to 1969. The “new” Southern Belle provides service for dignitaries and KCS business associates on special trips. While only invited guests can ride the train, at the Web site visitors are invited to meet the Belle’s Executive Chef, Hugo Cuevas, who was promoted in 2001 after traveling with the Belle for two and half years as assistant chef. Cuevas then reveals his method for preparing “smoked cured salmon without smoking,” and includes a detailed menu so visitors can prepare the dish at home.
